L\u2019industrie emploie maintenant quelque 15 000 Canadiennes et Canadiens et exporte 101 000 tonnes de produits alimentaires.<\/p>\n<p>La sant\u00e9 du saumon d\u2019\u00e9levage est toutefois continuellement menac\u00e9e au Canada par les maladies infectieuses, dont celles que causent les poux de mer, les virus et les bact\u00e9ries pathog\u00e8nes.<\/p>\n<blockquote><p><em>\u00ab Ces projets de collaboration, r\u00e9alis\u00e9s avec le financement de G\u00e9nome Canada, nous ont permis d\u2019appliquer de toutes nouvelles donn\u00e9es \u00e0 des probl\u00e8mes scientifiques dont la solution se serait fait attendre des ann\u00e9es encore. Gr\u00e2ce \u00e0 eux, nous avons pu mieux servir nos actionnaires, nos clients, les consommateurs canadiens et internationaux. \u00bb<\/em><\/p>\n<p><em>&#8211; Richard Taylor, chercheur principal, Cargill Aqua Nutrition<\/em><\/p><\/blockquote>\n<p>La qualit\u00e9 des aliments peut influencer la sant\u00e9 des saumons. De meilleurs aliments peuvent en am\u00e9liorer la sant\u00e9, r\u00e9duire le recours aux antibiotiques et am\u00e9liorer leur taux de croissance. Jusqu\u2019\u00e0 maintenant, toutefois, les entreprises d\u2019aliments aquicoles ne disposent d\u2019aucun moyen pratique de mesurer le rendement des nouveaux aliments \u00e0 part la pes\u00e9e des poissons et de juger de l\u2019efficacit\u00e9 de leurs aliments \u00e0 part les taux de croissance.<\/p>\n<p>Dans le cadre du projet financ\u00e9 par G\u00e9nome Canada et intitul\u00e9 Plateforme de biomarqueurs pour l\u2019essor commercial des aliments pour poissons d\u2019\u00e9levage, lanc\u00e9 en 2014, Matthew Rise, Ph. D., de l\u2019Universit\u00e9 Memorial, Richard Taylor, Ph. D., de Cargill Aqua Nutrition (division de Cargill qui a fait en 2015 l\u2019acquisition d\u2019EWOS, une entreprise d&rsquo;alimentation des saumons) et d\u2019autres collaborateurs travaillent \u00e0 l\u2019identification et \u00e0 la validation des g\u00e8nes du saumon li\u00e9s \u00e0 sa croissance afin de les inclure dans un panel de biomarqueurs. \u00c0 partir d\u2019un seul poisson, les chercheurs analysent l\u2019expression d\u2019environ 30 g\u00e8nes li\u00e9s \u00e0 la r\u00e9action \u00e0 la maladie et \u00e0 la croissance pour d\u00e9terminer les effets de divers aliments et ingr\u00e9dients \u00e0 l\u2019\u00e9chelle g\u00e9nomique. L\u2019influence du r\u00e9gime alimentaire sur le m\u00e9tabolisme des lipides ou la r\u00e9action immunitaire aux antiviraux en sont des exemples.<\/p>\n<p>Le processus de transformation de ces donn\u00e9es en aliments de meilleure qualit\u00e9 n\u2019a pas pour seul objet de stimuler l\u2019immunit\u00e9. Les biomarqueurs g\u00e9n\u00e9tiques permettent aux chercheurs de suivre ce que chaque pathog\u00e8ne ou autre stimulus immunitaire fait au saumon et le traitement potentiel, lorsqu\u2019il est ajout\u00e9 aux aliments donn\u00e9s au poisson. Dans le cas des infections bact\u00e9riennes, par exemple, il est important de limiter l\u2019inflammation chronique. Dans le cas d\u2019infections virales, il peut falloir contr\u00f4ler l\u2019\u00e9nergie digestible et ajouter des stimulants immunitaires.<\/p>\n<p>Les outils g\u00e9nomiques mis au point dans le cadre de ce projet permettent \u00e0 Cargill Aqua Nutrition, l\u2019un des plus grands producteurs mondiaux d\u2019aliments piscicoles, de d\u00e9terminer \u00e0 l\u2019\u00e9chelle cellulaire l\u2019influence qu\u2019exercent les aliments sur le poisson. L\u2019entreprise peut aussi \u00e9valuer avec rapidit\u00e9 et exactitude l\u2019influence de tout nouvel ingr\u00e9dient au lieu d\u2019attendre des mois pour que le poisson montre des changements perceptibles de taille.<\/p>\n<p>Cette technologie aide Cargill Aqua Nutrition \u00e0 am\u00e9liorer ses formules alimentaires et \u00e0 cr\u00e9er de nouveaux aliments de grande qualit\u00e9. L\u2019entreprise commercialise les nouveaux aliments au cours de la dur\u00e9e pr\u00e9vue du projet et de nouveaux produits suivront pro-bablement dans les prochaines ann\u00e9es. Cargill Aqua Nutrition fournit environ 80 % des ingr\u00e9dients alimentaires \u00e0 partir du Canada et les vend ici au Canada, aux \u00c9tats-Unis, au Mexique et en Asie.<\/p>\n<p>MM. Rise et Taylor ainsi que Mark Fast de l\u2019Universit\u00e9 de l\u2019\u00cele-du-Prince-\u00c9douard et leurs collaborateurs ont ensuite re\u00e7u du financement pour un second projet du PPAG en 2016 : Gestion int\u00e9gr\u00e9e des agents pathog\u00e8nes de co-infection dans le saumon atlantique.
