Cette coop\u00e9rative, qui appartient \u00e0 3 400 producteurs laitiers et qui transforme plus du quart du lait produit au Canada, veut tirer profit de la demande en croissance des fromages fins en mettant au point une marque haut de gamme de fromage \u00e0 p\u00e2te molle \u00e0 cro\u00fbte lav\u00e9e. La fabrication du fromage est un proc\u00e9d\u00e9 tr\u00e8s complexe et un affinage non optimal peut nuire \u00e0 la dur\u00e9e de conservation, causer des retours et des retards.<\/p>\n<p>Agropur s\u2019associera \u00e0 M. Steve Labrie, chercheur renomm\u00e9 de l\u2019Universit\u00e9 Laval dont les techniques g\u00e9nomiques pour la surveillance de la composition du microbiote auront des r\u00e9percussions directes sur la production de fromages de grande qualit\u00e9.<\/p>\n<p>L\u2019\u00e9quipe du projet surveillera l\u2019affinage des p\u00e2tes molles \u00e0 cro\u00fbte lav\u00e9e haut de gamme \u00e0 l\u2019aide du s\u00e9quen\u00e7age de la prochaine g\u00e9n\u00e9ration. Le projet m\u00e8nera aussi \u00e0 la mise au point d\u2019un nouvel outil g\u00e9n\u00e9tique gr\u00e2ce auquel Agropur pourra mieux contr\u00f4ler sa production, limiter les pertes et produire des fromages de grande qualit\u00e9 qui auront une meilleure dur\u00e9e de conservation et feront l\u2019objet de moins de retours. De plus, le projet m\u00e8nera \u00e0 la cr\u00e9ation d\u2019un ensemble de profils g\u00e9nomiques normalis\u00e9s sans pr\u00e9c\u00e9dent dans l\u2019industrie de la fabrication du fromage qui permettront d\u2019instaurer une culture fromag\u00e8re optimale. Les outils g\u00e9nomiques feront partie int\u00e9grante de la production fromag\u00e8re d\u2019Agropur et lui permettront de d\u00e9tecter les d\u00e9s\u00e9quilibres dans le microbiote (microorganismes) du fromage qui nuisent \u00e0 son affinage.<\/p>\n<p>Globalement, ce projet permettra de mieux comprendre le proc\u00e9d\u00e9 complexe de la fabrication du fromage et guidera la mise au point de nouveaux fromages.
