Tous les autres produits de la transformation des produits laitiers \u2013 cr\u00e8me, lait \u00e9cr\u00e9m\u00e9, fromage et concentr\u00e9s de prot\u00e9ines \u2013 sont vendus sur des march\u00e9s qui sont toujours rentables. En revanche, le sous-produit du lactose, appel\u00e9 perm\u00e9at d\u2019ultrafiltration (UF), est un produit de base de faible valeur et, dans de nombreux cas, les flux de lactose sont \u00e9limin\u00e9s dans des lagunes ou \u00e9pandus sur le sol.\u00a0 L\u2019objectif de ce projet est de fournir de la levure en concevant une voie qui produit de l\u2019acide fumarique par la fermentation du lactose. Ce projet utilise la g\u00e9nomique pour mettre au point une technologie qui convertit un sous-produit laitier interm\u00e9diaire de faible valeur en surplus en un produit de grande valeur utilis\u00e9 dans l\u2019industrie alimentaire et les applications industrielles.\u00a0 Cela permettra de r\u00e9duire l\u2019incidence environnementale de l\u2019\u00e9limination du lactose.
